Ingredients:  
3 pork hocks (or as many as you have)
1 1/2 tsp salt
1 onion,
Salt, pepper, sage to taste.

Directions:
Directions:
Put first 3 ingredients into pot, cover with water and bring to boil
Turn down heat, simmer about 1 1/2 hrs, adding more water if needed.
Cook until fork tender. Remove meat from pot, but keep broth.
Cut meat off hocks and grind with meat grinder, or cut up finely.
Strain broth over meat, add salt, pepper and sage and mix well.
Chill..
