1 red bell pepper; diced
1 green bell pepper; diced
1 yellow bell pepper; diced
1-1/2 cups diced red onion
1 can corn; drained and rinsed
1 clove garlic; minced
1 teaspoon cilantro
1-1/4 cups olive oil
4 tablespoons red wine vinegar
1 teaspoon lime juice
salt
freshly ground pepper
1 can Bush's black beans; drained and rinsed
1 can black eyed peas; drained and rinsed
tortilla chips

Directions:
Directions:
Cut all the bell peppers and red onion into 1/4 inch dice. In a salad bowl, combine bell peppers, onion, corn, garlic and cilantro and toss to mix. Add olive oil, vinegar, lime juice, salt and pepper to taste and toss again. Add beans and mix well. Serve with tortilla chips.
