½ c. sugar
½ c. brown sugar
½ c. shortening
1 egg
½ tsp. almond extract
¾ c. flour
½ tsp. baking soda
½ tsp. salt
1½ c. rolled oats

Directions:
Directions:
Blend sugar, brown sugar and shortening. Add egg and almond extract. Beat. Sift together and add flour, baking soda, and salt. Add rolled oats. Mix well and drop by tsp. onto ungreased cookie sheet. Bake at 350º for 8 minutes. Remove from oven and place a scant ½ tsp. Almond Topping in center of each cookie, pressing in slightly. Bake 6-8 minutes or until done. Cool 1 minute before removing from cookie sheet.

⅓ c. sugar
½ c. butter
1 tbsp. light corn syrup
½ c. blanched almonds
½ tsp. almond extract

Directions:
Directions:
Combine sugar, butter, and corn syrup in sauce pan. Bring to boil. Remove from heat and stir in blanched almonds and almond extract.
