2 c. white sugar
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
4 eggs
1½ c. salad oil
3 c. raw carrots (grated or ground fine)*

Directions:
Directions:
Combine sugar, flour, cinnamon, baking soda, and salt. Mix together and add eggs, salad oil, and carrots. Bake in greased and floured 9x15 pan at 350º for 1 hour.
 

Frosting

1 large package cream cheese
1 stick oleo (softened)
1 tsp. vanilla
powdered sugar
nuts (chopped) optional

Directions:
Directions:
Cream softened cream cheese, softened oleo, vanilla and nuts. Add enough powdered sugar to make frosting thick enough to spread.
