1/2 cup margarine
1/2 cup each white and brown sugar
2 T. molasses
1 large egg
1 cup finely shredded coconut
1 tsp. vanilla
1 tsp. baking soda
1/2 cup all purpose flour
1 tsp. baking powder
1 tsp. each of allspice, cinnamon, nutmeg
1 1/2 cups rolled oats

Directions:

Preheat oven to 325ºF.
Place parchment paper on each cookie sheet.
Cream together margarine and sugars.
Add egg, coconut, molasses and vanilla.
In a separate bowl, whisk together flour, baking powder and baking soda, spices and oats.
Add dry ingredients to the moist mix and combine until dry ingredients are no longer visible.
Roll into small balls.
Bake 15 minutes.
Cool at least 5 minutes on cookie sheet before removing to rack to cool completely.
