2 eggs
1 c sugar
1teaspoon baking powder
1teaspoon baking soda
1teaspoon vanilla extract
½ c nuts (optional)
2 c mashed bananas (3 good sized)
½ c butter melted
2 c flour
½ cold water if bananas are not fully ripened
Chocolate chips (optional)

Directions:
Directions:
Preheat oven to 325 – this is your baking temp.

Smash bananas and set aside.
Mix eggs, sugar, vanilla and butter until creamy. Blend in the baking powder and soda. Slowly add flour until mixed. Slowly add bananas until blended – add water if needed. Fold in nuts and chocolate chips.
Pour into loaf pan(s) – spread to edges and shake the batter down in the pan. You can also make banana bars using a cake pan.
Bake 40-45 minutes for bars. 1 hour for large loaf pan. 30-35 min for small loaf pan. Insert tooth pick in the middle to make sure it is not still doughy inside.
