"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 head green cabbage
1½-2 lbs ground beef
1 large onion, diced
1 can diced tomatoes
salt & pepper to taste
1½ cup uncooked rice
1-2 cans tomato soup

Directions:
Directions:
Cut around the core of the cabbage and place into boiling pot of water for approx 2 minutes. Peel off the softened leaves. Place remaining head back into boiling water and repeat steps until all the leaves are removed. Now removed any thick tough stems from cooked leaves. Set aside to cool. Pre-heat oven to 350º. Cook rice according to package directions. Set aside. Cook beef, onions, (additional spices to your liking). Drain any fat. Add in the rice, salt & pepper. Next lay the cabbage leaf flat and add some beef and rice mixture to the center of the leaf. Fold in the sides and roll the cabbage up, tucking in the ends so no filling falls out. Place seam side down on baking dish. Repeat with remaining cabbage. Pour tomato soup sauce and diced tomatoes over the cabbage rolls and cover with tin foil. Bake for aprox 1 hour. Let cool for 10-15 min before serving
