1 c. wild rice
3 to 4 c. water or chicken or beef broth
4 T. butter
1 medium onion, diced
6-8 oz. fresh mushrooms, sliced
6 water chestnuts, slivered
2 T. golden Sherry
Salt and pepper to taste

Directions:
Wash wild rice by rinsing well in cold water and draining into sieve. Place the washed wild rice in a heavy saucepan with water or broth. Bring to a boil, reduce heat and simmer, covered, 40-50 minutes or until rice is fluffy and most of the grains have split slightly. Drench in cold water and drain.

Sauté onion and mushrooms in 4 tablespoons butter. Pour on wild rice. Add water chestnuts, sherry, salt and pepper and mix with fork. Place in buttered casserole with a couple pats of butter on top, if needed. Cover casserole and bake in a pre-heated 325 degree over for 1 hour.
