Ingredients: For the Orange-Pecan Spice Shortbread Cookies:
2 1/2 c. - flour 1/2 tsp. - cinnamon, finely ground 1/4 tsp - nutmeg, freshly grated 1/4 c. - pecans, toasted and finely chopped 6 Tbsp. - sugar 1 1/2 tbsp. - orange zest, freshly grated 1 c. - butter, cut up into small bits ------------------------------------------------------- Plum Jam Sugar for sprinkling, (I use a chunkier, sparkling clear, crystal sugar - look in the cake decorating area of Hobby Lobby)

Directions:Arrange oven rack in lower third of oven and preheat to 325º F. Line two baking sheets with parchment paper, set aside. Or grease cookie sheets.
In a medium bowl, combine flour, spices, nuts, sugar and orange zest. Using a pastry blender or heavy duty stand mixer with a paddle attached at low speed, cut in butter until mixture resembles fine crumbs and starts to cling together. Dough will still be very crumbly. Kneed the dough until smooth. Form into a ball and then flatten slightly into a compact disk.
On a lightly floured surface, roll dough until / inch thick. Using 1 1/2" to 3" size cookie cutters, cut into desired shapes. Place on prepared baking sheets 2 inches apart.
Bake for 18 - 22 minutes or until bottoms start to brown and centers are set.
Allow cookies to cool slightly on baking sheets for 2 minutes Using metal spatula, transfer,cookies to wire rack to cool completely before icing with jam and sprinkling with sugar. |
