For Cake:
2 9" round cake pans or 1 13X9" pan
2½ cups all-purpose flour, or cake flour
1⅔ cups sugar
1¼ tsp. baking powder
1¼ tsp. baking soda
1 tsp. salt
⅔ cup crisco shortening
⅔ cup buttermilk
1½ mashed bananas, (about 3)
2 large eggs

For Frosting:
1 box confectioners sugar
3 TBSP butter
½ tsp. pure vanilla extract
3-4 TBSP milk

Directions:
Directions:
Sift together the flour, sugar, baking powder, baking soda and salt. Set aside. In a large mixing bowl, blend the shortening, 1/3 cup of the buttermilk and the bananas. Beat 2 minutes. Add the 2 eggs, and the rest of the buttermilk. Beat 2 minutes more. Grease and flour the pans. Pour mixture into pans and bake in 350º oven. Layers: 30-35 minutes. 13X9: 45 minutes. Remove from oven and let cool 5 minutes. Remove cakes from round pans and cool on a rack.

HINTS: To measure crisco, use 2 cup measuring cup. Put 1⅓ cups water in and add shortening until the water reaches the top. To make buttermilk if you don't have any, put 1 TBSP white vinegar in measuring cup. Fill cup with milk and let stand 5 minutes. Remember this recipe only uses 2/3 of that buttermilk. For Frosting: Empty confectioners sugar into bowl. Melt butter and add. Add vanilla and slowly stir in milk until desired consistency. Beat until smooth. May need more or less milk.

This was my personal favorite when we were little. So I made it for Tyler's first birthday thinking he would like it too. Mom has a vivid memory of Tyler spitting it out immediately. So, in my infinite wisdom, I tried again for Jason's first birthday. He liked it but it wasn't pretty. It was a very humid July day, and the layer cake did not hold up. I had to use skewers to keep it from falling apart. This won't happen when you make it, though!
