1½ cups sugar
1 cup sifted cake flour (heaping)
1 dozen egg whites
2 pinches salt
1 teaspoon cream of tartar (heaping)

Directions:
Directions:
Sift sugar 3 times, sift flour 3 times. Beat egg whites until frothy, and add cream of tartar. Finish beating until stiff enough to hold upside down. Add sugar all at once and fold in. Add flour, fold in flour thoroughly. Bake about 50 minutes in moderate oven.
