Basic Pastry dough for 9", two crust pie, (Pillsbury is good, or homemade)
¾ - 1 cup sugar, (can use brown sugar, or combo of white and granulated maple sugar)
½ tsp. salt
1 tsp. cinnamon
½ tsp. nutmeg
1½ TBSP flour
6 large, firm, tart apples, like Granny Smith, Braeburn or Honeycrisp
2 TBSP butter

Preheat oven to 425º. Roll out pastry dough on a floured board and shaped into 2 separate rounds.

Line a 9" pie pan with one half the pastry dough.

Mix the sugar, salt, cinnamon, nutmeg, and flour in a large bowl. Peel, core, and slice the apples thin and toss them in the sugar mixture, coating them well. Pile them into the lined pan.

Cut the butter into small pieces and dot the top of the apples with the butter pieces. Roll out the top crust and drape it over the apples and butter.

Crimp the edges and cut several vents into the top of the pie. Bake 10 minutes, then lower the heat to 350º and bake 30-40 minutes more or until the apples are tender when pierced with a skewer and the crust is browned.

Grampa used to serve apple pie with cheddar cheese. But it tastes best served warm with vanilla ice cream!
