1 c. Margarine
1 c. Brown Sugar
1 Egg Yolk
Vanilla Extract
2 c. Flour
6 oz. Chocolate Chips
Optional: Finely Chopped Nuts

Directions:
Directions:
Cream margarine and brown sugar. Add egg yolk, vanilla, and flour. Blend well. Spread on cookie sheet with your fingers. Bake in smaller size cookie sheet for 15 to 20 minutes at 350º. Melt chocolate chips. Spread on while hot. Add chopped nuts (optional). Cool slightly and cut into small squares.

Mom would make these cookies every year at Christmas time. As kids, we loved them because they were covered in chocolate. One of Mom’s friends once said, “I don’t care for these.” We couldn’t believe it. Ever since, we refer to them as the Cookies Betty Jane Doesn’t Care For.
