1/2 large onion, chopped
1 1/2 tsp butter
4 cups cooked chicken, chopped in large pieces
1 can Cream of Chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup chopped pimentos or, if you prefer, 1/4 cup grated carrot
1 cup shredded mild cheddar cheese - divided
8 frozen biscuits, thawed or 1 can refrigerated tube biscuits

Butter the biscuits. Butter the sides and bottom of 11x7 baking dish. Preheat oven to 350º.

Saute onions in butter until tender. Combine onions, chopped chicken chicken soup, sour cream, milk, pimento or shredded carrot.
Here is the important step: Spoon mixture into prepared baking dish and bake for 15 minutes and remove from the oven. Sprinkle the baked chicken with 3/4 cup cheddar cheese. Arrange the biscuits in a single layer over the top and sprinkle with the remaining cheese.
Bake until biscuits are golden brown and the sauce is bubbly, about another 20 minutes.
Serve immediately.
