2 medium acorn squash
1 tbsp. butter
3 cups chicken/veg stock
1 tsp garlic powder
1/2 tsp sage
6 oz shredded cheddar cheese
1 1/2 cups evaporated skim milk
1/2 tsp ground nutmeg
salt pepper to taste

Directions:
Directions:
Preheat oven to 425 degrees F. Cut squash into half, bake upside down 45 min. Spoon pulp into food processor puree unti smooth. Mix butter, broth, sage,garlic and puree in a pot. Cook over low heat several minutes. Slowly add cheese and milk. Add salt pepper and nutmeg.
