Grandma Smith's Chocolate Pie Recipe

Filling:
1 cup sugar
2 heaping Tbsp. cornstarch
3 heaping Tbsp. cocoa (WJ used level Tbsps.)
Pinch of salt

3 egg yolks (save the egg whites for the meringue)
1 tsp. vanilla
½ stick (or more) butter
1 cup sweet milk

Meringue:
4 egg whites
8 Tbsp. sugar
1 tsp. vanilla
1/8 tsp. cream of tartar

Filling:
Stir together the first 4 ingredients and then add the next 4 ingredients.
Cook on medium heat, stirring constantly until thickened. 10 minutes maybe.
Pour into already baked cooked pie crust. Spread with meringue and brown.


Meringue:
Beat egg whites and cream of tartar in small bowl at high speed for 3 minutes. Next, add sugar gradually, one Tbsp. at a time. Add vanilla, continue beating at high speed for 5 minutes. Pile lightly on filled pie shell, spread lightly with a spatula. Bake in 300 degree oven for 15 to 20 minutes, until brown.

Sherrie's note: We cousins all had Grandma's chocolate pie recipe, for which she was famous. But, Coretta is the only one who could also share her meringue. Thank you Coretta!
