2 small/medium cloves garlic
1 can chickpeas, drained and rinsed
3-4 tbsp fresh lemon juice, to taste
1 tbsp tahini
3-4 tbsp avocado oil, to taste, plus more for serving
3/4 - 1 tsp fine sea salt, to taste
1/4 black pepper
Paprika, for garnish
Sesame seeds, for garnish (optional)

Mince the garlic in a food processor. Add chickpeas, lemon juice, and tahini. Process until combined. Scrape down processor bowl.
With the motor running, stream in avocado oil and process for a good minute or two, until hummus is very smooth. Add salt and pepper, process again.
Spoon into a container and refrigerate for a couple hours or overnight (this allows garlic flavor to settle), or just enjoy immediately!
Serve with drizzle of avocado oil, a sprinkle of paprika, and scattered sesame seeds.
