1 1/2 C flour
1 t baking powder
1/2 t soda
1/2 t cinnamon
1/2 t salt
1 ripe banana
1 egg
1 T oil
3/4 C packed brown sugar
1/4 C sugar
1/4 C applesauce
2 t vanilla
1 3/4 C oats
3/4 C dried cranberries
3/4 C pecan pieces

Directions:
Directions:
Preheat oven to 350

in a large bowl whisk together flour, baking powder, baking soda, and cinnamon and salt
in a medium bowl mash the banana
add the egg, oil brown sugar, sugar, applesauce and vanilla
gradually add the egg mixture to the flour mixture
stir just until incorporated
stir in oats
fold in cranberries and pecans
drop tablespoons onto baking sheet
bake, rotating position of the pan half way through
12 -14 minutes
Let cool on sheet 5 minutes before transferring to wire rack
