4 cups flour
2 lbl sugar
½ teas cinnamon
1 pinch salt
1/3 cup vinegar
⅔ cup water
2 eggs
2 tbl shortening

Directions:
Directions:
Sift together flour, sugar salt & cinnamon. Cut shortening with knife. Make well in mixture and add eggs slightly beaten blend in the vinegar and cold water. Turn dough onto a lightly floured surface and knead until smooth and elastic.

Wrap dough - refrigerate 30 min.
Set out aluminum cannoli tubes.
Heat oil in a deep saucepan for frying - cut dough oval shape to fit around tube , very thin, wrap dough around tube and seal ends with egg whites.
Fry until golden brown - remove shell and drain on paper towel.
Continue forming and frying.
