1 hen or two chickens
1 tsp salt

Cornbread:
3 cups self-rising cornmeal
1 cup self-rising flour
1/2 teaspoon soda
4 eggs
1/2 cup corn oil
Buttermilk

Dressing:
1 skillet cornbread
1/4 cup oil
2 tablespoons sugar
4 slices loaf bread
8 eggs, beaten well with electric mixer
Salt and pepper to taste
3 sticks margarine
2 tablespoons poultry seasoning
reserved chicken broth, heated
2 large onions, chopped
1 tablespoons sage (optional)

Directions:
Boil chicken in salted water to cover until tender, about 1 hour. Remove chicken from broth, reserving broth. Remove chicken from bones and cut in bite-size pieces.

Cornbread: Combine cornmeal, flour, soda, eggs and oil. Add buttermilk and blend to desired consistency. Pour into a greased 10 inch cast iron skillet. Bake at 450 degrees for 25-30 minutes, until golden brown.

Dressing: Crumble cornbread and loaf bread in a large bowl, set aside. Melt margarine in a skillet, add onions and sauté until tender. Add margaine and onions to crumbled bread. Add oil, eggs, poultry seasoning, sugar and salt and pepper. Add enough hot chiken broth to make consistency desired, mix well. Add chicken to mixture and stir slightly. Pour ino a large greased roasting pan. Bake at 375 degrees for 30-40 minutes, or until browned.
