Bison Burgers Recipe

Ingredients: 1 to 1 1/2 lbs ground Bison 1 piece of bread (gluten free if desired) 1/4 to 1/3 cup fresh Huckleberries or Blue Berries 1 to 2 T chopped fresh sage salt and pepper to taste
Freshly roasted peppers (red, poblano, whatever you like) Sautéed mushrooms (Morels, if you're fortunate enough to get them)
Buns and traditional condiments as required.

Directions:1. Mash the bread slice and berries together with a fork. As the consistency approaches a paste add the chopped sage, some coarse salt and pepper. Continue to mash together. Add the ground bison, stir with a fork and then with your hands to mix everything well. Let the mixture rest for several minutes then form into patties. 2. Grille over medium-high heat, about 7 minutes on a side, until cooked through. You can cook for a shorter time if you like your burgers rare. I like mine cooked through. 3. Toast your buns, baby.
Serve with your choice of burger condiments. I really, really like roasted red peppers and mushrooms. You can add cheese if you prefer. In other words, enjoy as you would. |

Notes: I like the blending of "native" flavors here. Blue berries are a fine substitute for Huckleberries but if you can get the latter, it's worth it. Morels are a blessing bestowed upon us often times without warning. And they are perfect here. Roasted red peppers complement the mix immeasurably. The long and short, though, is these burgers are fantastic. Change up the berries. Change up the herbs. It's hard to go wrong with bison.
