Pasta Carbonara aka "Breakfast Spaghetti" Recipe

Ingredients: 1 lb Dried Spaghetti 1 lb quality Bacon (I prefer a thick cut "cottage" style) 6 to 8 good eggs (fresh if you can get them) Zest of 1 lemon 2 T fresh Basil chopped 1/2 Cup grated Parmesan cheese (more to serve) coarse salt and fresh ground pepper to taste a splash of half and half or cream

Directions:1. Cook pasta per package instructions 2. While pasta cooks, chop and cook bacon. Reserve a small amount of the bacon fat. 3. Crack the eggs into a bowl and whip with a fork 4. Moving relatively quickly, once pasta is al dente, drain and pour back into the pan, add eggs and toss briefly. Add bacon and reserved fat and continue to toss. The heat of the pasta should start to cook the eggs but continue tossing so the eggs take on a sauce-like consistency rather than a 'scramble'. 5. Add lemon zest, basil and Parmesan and continue tossing until cheese melts and is incorporated in to the eggs. Add a splash of half and half or cream if needed to maintain consistency. 6. Add coarse salt and pepper to taste and serve with more grated parmesan on the side. |

Notes: In a classic sense this is a dinner meal. However, years ago in a restaurant somewhere, I had it for breakfast. It stuck and has remained a breakfast meal in my mind ever since.
