4 egg whites
1/2 t lemon juice
1/2 t vanilla
pinch of salt
3/4 C sugar
12 oz cocoa dark chocolate - melted and cooled
1/2 C chopped walnuts
1/2 C dried cherries or cranberries

preheat oven to 325
line cookie sheets with parchment paper

using a hand mixer with a whisk attachment beat eggs whites, lemon juice, vanilla, and salt until foamy
Gradually add sugar
Beat eggs until peaks form.
fold in chocolate, walnuts, and cherries

scrape half of the batter into a large zip-top plastic bag
cut 3/4 hole in the corner
pepe 2 inch cookies onto the prepared cookie sheet
top each cookie with a walnut half

Bake 15 minute or until outside is set and dry.
cool completely on cookie sheets.
