1 pound dried red beans
7 cups of water
1 whole green bell pepper - chopped
1 whole white onion - chopped
3 stalks celery - chopped
3 cloves garlic - finely chopped
3 tablespoons Creole seasoning
2 bay leaves
hot cooked white rice

Directions:
Directions:
Place all ingredients (minus rice) in a slow cooker.

Cook on HIGH, covered, for 7 hours.

Serve over hot cooked white rice with cornbread on the side. This is vegetarian on its own, but we like to eat it with cooked smoked turkey sausage.
