Grandma's Raisin Cake Recipe

Ingredients: 2 c. water 2 c. raisins 2 tsp. baking soda 1 c. shortening (I use 1/2 cup butter and 1/2 cup Crisco) 1 1/2 cup sugar (either white or brown) 2 eggs 3 c. all-purpose flour 2 tsp. cinnamon 1/2 tsp. nutmeg

Directions:Butter and flour a 9 x 14 pan. Preheat oven 350º
Put the raisins and water in a saucepan and bring to boil and cook until the liquid is reduced to 1 cup. As soon as the water is reduced to 1 cup separate the water and raisins. Add the 2 tsp. baking soda to the raison water this mixture will foam so make sure the bowl is large enough to handle the expansion.
While the raisins are cooking cream together the butter/shortening and sugar. Add 2 slightly beaten eggs to the mixture. Add a little more water to equal 1 cup if needed.
Mix flour, cinnamon and nutmeg together - if you are not a nutmeg fan you can substitute a little more cinnamon and/or add a little ground cloves.
Alternate the flour mixture and raisin mixture to cream mixture. Finally stir in the raisins and pour into buttered and floured 9 x 13 pan. Bake at 350 degrees until done. Toothpick will come out clean when done. |
