⅛ cup of crisco solid shortening
⅓ cup flour
6 cups of water
4 large potatoes, peeled and cut into 1 inch cubes
1 Tablespoon of salt
½ melting cheese like velveta

Directions:
Directions:
In a saute pan make a roux using the crisco and flour. First browning the flour fairly dark but not burned.

In a soup pan boil the water with the potatoes and salt approximately 10 minutes.

When the flour is sufficiently browned start adding the potato water using a measuring cup to the browned flour. This will make your roux. Make sure there are not any lumps.

Slowly stir the roux into the potatoes and water. Bring to a boil as it thickens then reduce the heat. Add the cheese and allow to melt.
