Kale Chips


Ingredients:

1 bunch Kale (Common Curly, Dinosaur, or others)(Quantity used will vary depending upon size of sheet pan.)
2-4 tablespoons Olive Oil
1-2tsp Salt
Grated Parmigiano-Reggiano, if using as a side dish.

Preheat oven to 400º
Place oven rack at highest position.

If kale is whole, trim away stems and tear into bit'ish sized pieces.

If you're unsure how much kale to use do the following.
Set out your sheet pan.
As you're trimming and tearing the kale, place onto the sheet pan until just a bit crowded, but in a single layer.

Place kale from sheet pan into a large bowl.
Add olive oil and salt.
Toss with rubber spatula or the like.
The kale should be lightly coated with olive oil.

Put kale back onto sheet pan and arrange in a single layer.

Place into oven and time 8 minutes.

After 8 minutes inspect kale by touching/moving a few pieces with a fork, tongs, etc.
You're listening/feeling for a crisp sound/look.

If the kale is still limp, put back into oven for 30, 60, 90 seconds and check again.
Be diligent though, cus the kale will go from done to overdone very quickly.

Once done remove from oven.

If using as a side dish, grate some fresh Parmigiano-Reggiano onto chips after removing from oven.

An average sized sheet pan makes about 3-4 servings.
 

Popcorn


Ingredients:  
Ingredients:  
Some Orville Redenbacher kernels
Olive oil
1-2(or more) T butter
Salt, to taste
A bit of Lowry's seasoned salt


Directions:
Directions:
Put olive oil into a pan to coat bottom.
Pour in some popcorn kernels.
Cover.

Put burner on high heat.

While waiting for the corn to pop, melt butter in a small saucepan.

Once popping starts monitor very closely for the popping to slow down.
Once popping slows considerably, turn off heat and remove from burner.

Lift lid and pour on the butter.
Cover and give some good shakes.

Lift lid and add salt, to taste and a bit of Lowry's seasoned salt.
Cover and give some good shakes.

Lift lid and grate some Parmigiano-Reggiano onto the popped kernels.
Mix with a spatula/spoon, grate some more cheese and mix.

Pour seasoned popcorn into a large'ish bowl and add the kale chips.
Gently mix with spatula/spoon.

Eat with restraint.

An excellent, earthy flavor that pairs well as a side dish with most everything.

An absolutely fantastic pairing with popcorn.
