1 lb butter
1 lb brown sugar (light)
5 eggs (save 3 egg whites)
1/2 t salt
1 t vanilla
5 c flour
cinnamon sugar

Directions:
Directions:
Cream butter and sugar well, add eggs, cream again, add flour one cup at a time. Put dough in frig overnight.
Before starting to bake, make about 21 balls of dough. Keep cold at all times.
Take 1 ball out at a time. Roll out fairly thin.
Beat 3 egg whites until they are broken up. Brush the dough then sprinkle with cinnamon sugar mixture.
Cut into size you want put nut in center of each cookie. Lift cookie with pancake turner to cookie sheet.
Bake 400F about 6-8 minutes. Remove from cookie sheet immediately.
When rolling cookies use 1/2 flour and 1/2 - 10x sugar
