1 cup raisins
1 cup water
1 cup sesame seeds
1 cup flour
1 cup rolled oats
1 tsp cinnamon
1 tsp. baking powder
1 tsp salt
1 cup apple sauce
2 T canola oil
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350º
Spray a cookie sheet with oil.
Boil raisins for 1 minute and set aside to soak for 10 minutes. Drain the raisins and reserve the soaking water. Chop the raisins. Put sesame seeds in a pan and toast by stirring constantly until they turn golden brown, about 10 minutes.

Whisk together the flour and toasted sesame seeds. Put the apple sauce in a 2-cup measuring cup and add reserved raisin water and 2 tablespoons oil. If needed, add water to equal a total of 1 cups liquid. Add raisins to dry ingredients. Then stir in wet ingredients. Cover and refrigerate for 30 minutes.

Spoon batter onto cookie sheet. Use moist fingertips to flatten the cookies to about inch thick. Bake for 25 minutes, or until cookies are lightly golden brown.
