2 c. flour
1 (¾ oz.) yeast
½ lb. butter (1 c.)
⅓ c. luke warm water

Directions:
Directions:
Dissolve yeast in the water. Cream butter well. Add flour gradually. Stir yeast mixture in to flour and butter. Blend well. Put 2-3 tbsp. sugar on waxed paper or glass plate. Pinch off pieces of dough about the size of a walnut. Shape into balls. Press balls flat in sugar with palm of hand, first on one side, then the other until coated with sugar and very thin. Place on well greased or non-stick cookie sheet. Bake at 375 º for 10-15 minutes. Watch carefully!

For a crispy, caramelized cookie, bake until golden brown.

It takes some practice to get these cookies right, but don't give up. They are great with home-made vanilla ice cream.
