1 (3 to 4 lb) chicken, cut up
3 c. all-purpose flour
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp paprika
2 tsp cayenne pepper or chili powder
1 tsp black pepper
1 tsp salt
2 c. buttermilk
2 tbsp hot chili sauce
2 1/2 c. water
1/4 c. Kosher salt
1/4 c. apple cider vinegar

For the Brine: Mix together the water, vinegar and salt.

Stir the brine mixture and pour over chicken pieces, coating each piece well. Set aside at room temperature for at least 30 minutes.

In a large shallow platter, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt and pepper until well blended. In a seperate large bowl, mix together the buttermilk and hot sauce.

Drain the chicken and pat dry. Dredge a piece of chicken in the flour mixture, then dip it into the buttermilk, then dredge again in the flour and set aside, about 3 or 4 pieces at a time. Continue with the rest of the chicken pieces.

Heat oil to 375 degrees F, over medium heat, or in a large deep fryer. Working in batches, carefully add the chicken pieces 3 or 4 at a time. Fry, turning once until golden brown and cooked through. About 20 minutes. Remove from the oil and place on a rack to drain. Repeat with remaining chicken.
