1 stick unsalted butter, softened
¾ cup sugar
3 eggs
¼ cup milk
pinch of salt
1 ½ t lemon extract
1 T baking powder
3 cups flour

Glaze:
1T butter, softened
1 cup powdered sugar
1 T lemon extract
whole milk

Directions:
Directions:
Cream the butter and sugar. Add eggs and mix well. Add milk, salt and lemon extract and mix well. Add baking powder and flour and mix until smooth and the dough will hold a shape. Let the dough rest for 15-20 minutes. It should not stick to your hands. Make dough into a small ball (walnut sized) or scoop with a 1.25" scoop and roll into a 3" snake. Spiral snake into a snail or spiral flat like a lollipop and bake at 350º (325º convection) for 8-10 minutes. The cookies will be lightly browned on the bottom.
Mix glaze ingredients (butter, sugar and extract) to a frosting and thin with milk until you can spread it easily on a cookie with your finger. Coat the cookies when cool. It is pretty to add a little food coloring to the frosting (pale pink, pale green or pale yellow are traditional) . You can then put sprinkles on top if you wish.
Makes 100 dozen cookies
