Hot Cocoa Cookies

½ c. Butter
12 oz. Semi-Sweet Chocolate Chips
1½ c. Flour
¼ c. Cocoa Powder
1½ tsp. Baking Powder
¼ tsp. Salt
1¼ c. Brown Sugar
3 Eggs
1½ tsp. Vanilla
25 (approximate) large Marshmallows

Directions:
Directions:
1. In a medium saucepan, melt the butter and chocolate, stirring frequently. Once melted, set aside to cool slightly.Beat the sugar, eggs and vanilla on low speed until well combined.
2. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.
3. Add the cooled chocolate mixture and blend.
4. While mixing, add the flour mixture slowly and blend until just combined.
5. Refrigerate dough for about 1 hour. If making the dough a day ahead, let sit at room temperature for 30 minutes before shaping.
6. Preheat oven to 325º.
7. Make tablespoon sized balls and place on baking sheet approximately 2 inches apart, then flatten balls slightly.
8. Bake cookies for about 12 minutes.
9. While the cookies bake, cut the large marshmallows in half (crosswise).
10. When the cookies have baked, remove from oven and press one marshmallow half (cut side down) into the center of each cookie.
11. Return the cookies to the oven and bake another 2-3 minutes.
12. Allow the pan of cookies to cool a few minutes, then transfer cookies to cooling rack.
 

Hot Cocoa Cookie Icing

2 c. Powdered Sugar
4 tbsp. Butter (melted)
¼ c. Cocoa Powder
¼ c. Hot Water
½ tsp. Vanilla

Directions:
Directions:
1. Whisk together all icing ingredients.
2. Spoon icing onto the top of each marshmallow, and use the back of the spoon to spread it a bit.
**Optional** Add sprinkles on top of the icing (prior to cooling) for a fun pop of color

For easy clean up make sure you place the cookies on parchment paper or place baking sheet underwire cooling rack prior to frosting as the frosting does run off of the cookies

Allow icing to set up for about 30 minutes prior to serving.
