Date filling

2 lbs. chopped dates
2 c. brown sugar
2 c. hot water
4 tsp. vanilla

Directions:
Directions:
1) Chop dates into small pieces.

2) Add dates, brown sugar and hot water to a medium pot.

3) Bring to boil then cook on low heat until thick and smooth, stirring often. Add more hot water as needed if not smooth enough. Takes at least 45 minutes.

4) Remove from heat and add vanilla.
 

Crumble

1½ c. flour (or gf flour)
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
2 tsp. cinnamon, + plus more to taste
1 c. butter (or butter substitute)
1 c. brown sugar
1½ c. oatmeal

Directions:
Directions:
1) Sift flour, baking soda, baking powder, salt and cinnamon.

2) Rub in butter with fingers.

3) Add sugar and oatmeal. Mix well.

4) Spread half the crumbs in greased shallow pan (8"x12"). Pat to make smooth.

5) Cover with cooled date filling.

6) Cover with remaining crumbs.

7) Bake at 375ºF for 25 minutes. Increase heat slightly until golden.

8) Cut in squares while hot and allow to cool in pan.
