1 cup butter, softened (or Crisco shortening)
¾ cup sugar
1 egg
1 tsp lemon extract
2¼ cups flour
¼ tsp salt
½ tsp baking powder

Directions:
Directions:
Mixer on medium, cream butter till smooth. Add sugar, beat till light and fluffy. Add eggs and extract; add food coloring at this time, beat well. In separate bowl, put together dry ingrdients. Add in 3 increments, beating well each time. Shape into rolls. Refrigerate at least 2 hours or overnite. Bake 400º for 7-9 minutes or till lightly browned.
