Fruit Cocktail Cake

2 cups flour
2 eggs
1 ½ tsp baking soda
¼ tsp salt
1 ½ cups sugar
1 tsp vanilla
½ cup brown sugar
½ cup pecans
15 oz can fruit cocktail

Directions:
Directions:
Preheat oven to 350º.
Open can and reserve juice. In a large bowl mix flour, sugar, salt, baking soda, vanilla, and the juice from the fruit. Mix well. Add 2 eggs and beat well into mixture. Add fruit to the mix and stir.
Pour mixture into a sheath pan, sprinkle top with ½ cup brown sugar and ½ cup pecans.
Bake at 350º for 35 minutes.
 

Icing for Fruit Cocktail Cake

1 cup sugar
1 cup pet milk
1 stick butter
½ cup coconut

Icing:
In a small sauce pan, add sugar, pet milk, butter- let boil. Let boil about 2 minutes. Add ½ cup coconut to mixture, pour over cake while both are hot.
