1 c butter room temp.
2 c sugar
3 beaten eggs
1 c unsweetened applesauce drained
2 t vanilla
1 t baking soda
1 t baking powder
4 t cinnamon
1/2 t nutmeg
1 t salt
20oz crushed pineapple (drained)
1 c golden raisins
1 c chopped walnuts
3 1/2 c flour
1 c coconut (chopped finer)
3 c finely grated carrots
CREAM CHEESE FROSTING
8 oz softened cream cheese
1/2 c butter
2 t vanilla
1 lb conf sugar (3 1/2-4c)

HAS TO CHILL.
Beat butter, sugar and eggs together till fluffy and light. Add drained applesauce and mix, then vanilla. Blend in soda, powder, cinn, nutmeg, and salt. Mix well. Mix in pineapple, raisins and walnuts. Blend in flour gradually. Stir in coconut and carrots. Will be thick and sticky. Chill covered 2 hrs or OVN. PREHEAT 350º. Line sheets with p.paper. Use 2 spoons to drop dough - about 2 T. Wet fingers and shape. Bake 12min. Cool 1 min, then wire racks. Frost.
