1 1/4 c sugar
1 t salt
1 1/2 t baking soda
1 1/2 t ginger
1 c light molasses
2 beaten eggs
1 c butter melted
2 T hot water
4 c oatmeal (instant)
4 c flour
1 1/2 c raisins
1 c chopped nuts
1/2 c sugar

Mix 1st 4 ing and mix. Add molasses. Add eggs and mix. Add butter and water and mix. Add oatmeal gradually. Add flour gradually. Add raisins and then nuts and mix. Refrig for 1 hr. Can roll out to 1/4" and use 3 1/2' cutter or roll to size of plum (2 1/2") balls and roll in sugar and flatten; or roll in wax paper, refrig and slice. Use sugar to coat all ways. Bake 375º for 9-10 min. Cool 1 min, then rack.
Keep moist with lemon, orange, or apple peel.
