1/2 C butter, softened
1 C sugar
2 large eggs
1 1/2 C flour
1 tsp baking soda
1 tsp salt
1 C mashed banana, very ripe
1/2 C sour cream
1 tsp vanilla
1/2 C chopped walnuts or pecans

Directions:
Directions:
Preheat oven to 350º. Butter a 9x5x3 inch loaf pan and set aside.
Using an electric mixer, cream butter and sugar until light and fluffy. Add eggs and beat well.

In a medium bowl, whisk together flour, baking soda, and salt. Add this to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix until combined. Stir in nuts and pour into prepared pan.

Bake until a toothpick inserted in the middle comes out clean, about 1 hour and 10 minutes. Cool in pan for 10 minutes then turn out and finish cooling on a rack.
