1/4 cup of shortening

1/4 cup of butter

1/2 cup of peanut butter

1/2 cup of sugar

1/2 cup of brown sugar

1 egg

Preheat oven to 375º

Mix together: shortening, butter, peanut butter, sugar and brown sugar

Sift together and add: flour, baking powder, soda and salt

Bake for 10 to 12 minutes at 375º

My aunt Marcia (my mom's sister) would always have something for me to snack on when I was on my way home from elementary school. She would have tea and something for me to eat. My grandmother, Mimi, Marica and I would watch Graham Kerr (The Galloping Gourmet) and visit. Such great memories. Marcia was a home economics major and knew how to make great food! One snack she frequently gave me was tomatoes - which I dearly loved.
