2 3/4 lb. cake flour
1/3 c. double acting baking powder
1 T. salt
8 c. granulated sugar
3 c. shortening (Crisco)

Directions:
Directions:
Stir flour, baking powder, salt and sugar in a large pan. (Sift flour 3 times). Cut in shortening with pastry blender. Shortening must be blended uniformly. Store in covered container at room temperature. To measure mix for recipes, pile lightly into cup and level with spatula.

This mix is used for many recipes including; Orange Raisin Cookies, Date Nut Sticks, Hermits, Polka Dot Cookies, Peanut Cookies, Sugar Cookies, Chocolate Cookies, Pineapple Upside Down Cake, Cocoa Cake, Spice Cake, Coconut Squares, Coconut Cookies.


I attributed this mix and the recipes that can be made from it to Ethel Dreher Bacon, Hazel Brown's sister, because they are not in Hazel's handwriting and Aunt Ethel was a cook for many years in the Benton Harbor Schools. LC
