3 lobsters, cooked and picked
12 large scallops, quartered
1 lb shelled, cleaned medium shrimp
1 ½ cup milk
1 ½ cup heavy cream
¼ cup butter
¼ cup dry sherry
Salt
Cayenne pepper
½ tsp paprika

Roux: ¼ cup butter, ½ cup flour

Directions:
Directions:
1) Saute shrimp, scallops and lobster in butter and paprika.
2) Move seafood to a crock pot set on low.
3) Add sherry to hot saute pan and boil hard to deglaze the pot.
4) In a saucepan on medium heat, cook flour and butter, whisking until blended and bubbly.
5) Slowly whisk milk in, pouring in a half-cup at a time.
6) Add cream slowly, whisking continuously until mixture thickens (3-5 minutes)
7) Cook longer for thicker roux or add water to thin.
8) Season with salt and cayenne pepper.
9) Pour over warmed seafood and stir.
10) Serve with linguini, saltines or common crackers or toast.
