1/2 c. finely chopped onion
1/4 c. finely chopped red pepper
2-4 cloves garlic, minced
1 tbsp. butter
1 can black beans
1 egg
1 egg yolk
1/2 tbsp. cilantro
1/2 tsp. pepper
1/2 tsp. hot sauce
1 cup fine dry bread crumbs
2 tbsp. cooking oil

Directions:
Directions:
1. Cook onion, red pepper, and garlic in butter in a saucepan over medium heat until tender. Transfer to a mixing bowl.
2. Warm Beans, just enough to mash slightly.
3. Stir together beans, onion mixture, egg, egg yolk, cilantro, pepper, and hot sauce. Stir in 1/2 cup of the bread crumbs to form a mixture that holds together.
4. Shape into paatties; coat with remaining crumbs.
5. Heat oil in a skillet over medium-high heat. Cook cakes in hot oil to desired crispiness.
6. Serve with sour cream.
