Ingredients: 6 tomatoes of varying sizes, chopped 4 small jalapeno peppers or 2 large (for extra kick, leave seeds in) 1/2 onion 1/4 - 1/2 cup fresh cilantro 3 - 5 garlic cloves 1/2 to 1 tsp. ground cumin 1 tsp sea salt Juice of one lemon and one lime

Directions:Add all ingredients to the bowl of a food processor or blender. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too soupy.
For best results, refrigerate for 1 day prior to serving to allow flavors to marry and meld. Salsa will keep for about 1 week in an airtight container or jar in the fridge. |

Notes: We used 1 large jalapeno and it was too hot. Second batch, we used 1/2 of a large jalapeno and it was just right. Next time, used 1 large and had hardly any kick at all! Depends on the pepper apparently!
Also, we used 1 tsp. of cumin in the first batch and 1/2 tsp. in second batch. Next one, I'm going to try 3/4 tsp. - I think that will be just right.
