2 cups butter at room temperature
1 cup fruit sugar or very fine sugar
½ cup cornstarch
3 cups all purpose flour
Sifted icing sugar

Heat oven to 350˚F.

Beat butter and sugar with an electric mixer or in a food processor until light and fluffy. Mix in cornstarch. Gradually beat in flour and continue beating. Using a wooden spoon, stir in pecans and chocolate pieces if you wish. Drop by heaping tablespoons onto cookie sheets, about 1 inch apart. Optional: Add a piece of red or green cherry on top. Bake approx. 20 minutes until lightly browned edges. Cool and dust with icing sugar.

Makes 4 dozen cookies. Can be made ahead and frozen for up to 3 months

Variations:
Toblerone Bar pieces or Chocolate Orange pieces, coarsely chopped or chocolate chips or 1 cup chopped pecans (optional). I make this every Christmas.
