1 cup butter
1 cup sugar
1 egg
¼ cup milk
1 teaspoon vanilla
1 teaspoon almond extract
½ teaspoon fresh grated lemon rind
½ cup finely chopped almonds
½ teaspoon salt
3 cups flour
12 cardamom bean pods (remove seed from bean pods and crush very fine)




Directions:

Cream together butter and sugar. Add in remaining ingredients and mix thoroughly.

Shape dough into a roll, wrap in plastic wrap and refrigerate overnight. Slice and bake on a lightly greased cookie sheet at 400 degrees for 12-15 minutes.
