Ingredients: 1 1/2 Tbsp. instant yeast 1 3/4 cup warm water 1/4 cup butter, melted 1/2 cup sugar 1/2 Tbsp. salt 1/2 Tbsp. dough enhancer (if available) 1/2 Tbsp. gluten (if available) 1 egg 5 1/2 cups flour

Directions:Melt the butter and add all ingredients to the bowl. If you need to add a little more water because it looks too dry, add 1/2 Tbsp. at a time. You may add more flour if it is too sticky.
In a mixer with a dough hook, the dough should pull away from the bowl halfway up. If you are mixing by hand, stir until it holds together and turn out onto a floured or lightly oiled countertop. Knead for 8 minutes (with the mixer or by hand). Dough should be smooth and elastic, but not too dry.
Roll into about 30 walnut-sized balls and place into a greased baking pan with at least 2-inch tall sides. Bake for17 minutes in a 325-350 degree oven.

The baked dinner rolls freeze well.
You might want to experiment with letting them rise for an hour or so before baking.
