1 c Flour
½ tsp. Baking Powder
½ tsp. Salt
½ tsp. Baking Soda
½ c. Butter, room temperature
½ c. Sugar
½ c. Brown Sugar, firmly packed
1 Egg
1 tsp. Vanilla
½ c. Quick Cooking or Regular Oats
1 c. Chopped/Peeled Apple, 1/4"
2 c. Flake Coconut

Preheat oven to 375º

Mix flour with baking powder, salt and baking soda. Set aside.
Beat butter, gradually adding in both sugars and beat until light and fluffy. Blend in the egg and vanilla
Begin to blend in the flour mixture 1/2 cup at a time until all in mixed in. Add the apple, oats and 1⅛ cup coconut.
Drop from teaspoon onto parchment paper lined sheet trays. Sprinkle with remaining coconut. Bake for 10 minutes.

NOTE: For JUMBO cookies, use approximately 1/4 cup dough placed on the sheet tray, slightly flattened.
Bake for 15 minutes.

NOTE: For BAR cookies, spread the batter into a greased 9x13 pan and bake for 25-30 minutes.
