Beat 5 egg whites until stiff; store in refrigerator.

Cream Together:
2 cups sugar
1 stick oleo or butter
½ cup Crisco

Add:
5 egg yolks, one at a time, alternately, with 2 cups sifted flour. Mix in 1 cup buttermilk and 1 tsp. baking soda.
Fold in 1¼ cups coconut and 1 tsp. vanilla.
The, fold in the beaten egg whites.

Directions:
Directions:
Grease and flour a 13 x 9 cake pan, or use 2-9" round pans. Bake at 325º for 25 minutes.

When cool, frost with icing:
½ stick oleo or butter
8 oz. cream cheese, softened
1 box powdered C&H sugar
½ tsp. vanilla
1 cup coconut
chopped pecans, optional
