Lamb:
¼ c. olive oil
2 T. garlic, minced
1 tsp. Dijon mustard
1 tsp. chopped rosemary
1 tsp. chopped thyme
2 racks of lamb, trimmed & frenched

Mint Pesto:
2 c. fresh mint leaves
¾ c. olive oil
¼ c. fresh lemon juice
4 garlic cloves
1 tsp. salt
½ tsp. red pepper flakes (optional)

For the lamb:
Whisk all ingredients except lamb in a small bowl to blend. Wrap bone ends in aluminum foil to prevent burning. Brush oil mixture over lamb racks. Grill over medium direct heat, starting with bone side down, until lightly browned; about 3 minutes on each side, turning a couple of times, then stand the racks on end leaning against each other bones pointing up for another 3 minutes until they are nicely brown. Lower heat to medium low and move racks to indirect heat, bone side down, and grill until done to your liking; test with instant meat thermometer, 130º for medium rare takes about another 15 to 20 minutes. Remove to cutting board and let rest for 10 minutes before slicing into chops. Serve with mint pesto on the side.

For the pesto:
Put all ingredients into a food processor or blender and process until pureéd. Serve in a small bowl as an optional sauce for the lamb.

This is one of my husband, Patrick's, favorite special meals. He also likes just plain old mint jelly with the chops, too.
